I always find amber to be more expensive than jadeite. Other than armor, are there any possible explanations for this?

Amber is in greater demand or smaller supply. It's pretty much the only answer we can have unless ANet has made alterations to the game mechanics.

It certainly isn't smaller supply because of AB and stuff like Ft. Aspenwood.

Between Jade Arena and rigged Aspenwood, Jade has always been easier to acquire.

Similarly, I noticed that ectos currently cost a lot more than sapphires do, they really need to fix that and start selling them for the same price.

yup kurzick armour just looks better, so more people want to buy it, so the demand for amber goes up and since this has a direct impact on the price of amber that will in turn go up as well.
